Make-it-at-Home Monday: Triple Chocolate Layer Cake

Finally, I have perfected the art of layered cakes!!!
It took me a few years (lol) and many trial and error cakes! :)
This recipe is one of my personal favorites! Enjoy!


Triple Chocolate Layer Cake

Chocolate Cake:
3 Cups Flour
2 Cups Sugar
2 tsp B.Soda
1 tsp salt
1/3 Cup Cocoa
2 Cups water
1 Tbsp Vanilla
2/3 Cup Oil
2 Tbsp Vinegar

Add dry ingredients in a bowl, mix well. Then add the wet ingredients mixing well in between additions. Pour into 2 greased 9" round cake pans. Bake @ 250 for 35 minutes. When cakes are done, let cool in pan. Then, carefully use a spatula (or other flat untinsel) to scrape the cake away from the pan. (Make sure to carefully scrape underneath the cake too.. just to loosen it from the pan) Then, place cake pan unside down on a paper towel , lift pan away and let cake cool. While the cake is cooling, time to begin the frosting!

French Silk Frosting
2 2/3 Cup Powdered Sugar
2/3 Cup soft butter
2 oz unsweetened chocolate, melted
3/4 tsp vanilla
2 Tbsp milk

Blend everything together in a mixer at med speed, EXCEPT the milk.
When well mixed, add milk slowly.. and beat until frosting is fluffy!

Now.. to assemble the cake! Place the first cake on a pan and frost gently and fairly generously. Then put about 1/2 cup chocolate chips onto frosting, and drizzle a nice layer of chocolate syrup on top of that. (Hot fudge topping would also work well!) Then, place next cake layer on top, and frost, leaving a little for the sides. Frost sides of cake, carefully, as the cake could crumble. Put more choc chips on top of cake and drizzle with choc. syrup. Cake is ready to enjoy!

thanks for that recipe laura! i made the cake today and it is sooo good! i made mine in a bundt pan because i do not have 2 round cake pans, but it turned out great! my camara batteries are dead, otherwise i would post a picture of it. so thanks for the treat for today!!
